The healthy rotis along with a bowl of low-fat curds and khichdi makes a complete nourishing meal for diabetics and people with heart disease. Preparation Time: 10 minutes Cooking Time: 25 minutes Makes 8 servings Ingredients 1 cup jowar (white millet) flour 1/4 cup finely chopped fenugreek (methi) leaves 1/4 cup chopped coriander (dhania) 1/4 cup grated cauliflower 2 tsp finely chopped green chillies salt to taste jowar (white millet) flour for rolling 2 tsp oil for cooking For Serving fresh low-fat curd Method 1. Combine all the ingredients in a bowl and knead into a soft dough using enough water. 2. Divide the dough into 8 equal portions and roll out each portion into a 75 mm. (3") diameter circle, using a little jowar flour. 3. Heat a non-stick tava (griddle) and cook the roti, using ΒΌ tsp of oil, till brown spots appear on both the sides. 4. Repeat with the remaining portions to make 7 more rotis. 5. Serve hot with fresh low-fat curds.
