I wanted to share this muffin recipe. It is gluten and dairy free. In my former life, I was a pastry chef, so I get excited when a "healthy muffin" actually tastes good. I have always taken a healthy approach to my baking. When I worked in a five star hotel, the chef would give me all the diabetic customers to make something special besides a fruit bowl for them. These days, we have so many incredible ingredients that you can acquire for better tasting recipes. Most of them are available on line if you do not live near a health food store. I hope you will try them.
 

Coconut Blueberry Chia Muffins

Gluten Free and Dairy Free

Makes 12 muffins

1 cup organic coconut flour

½ tsp sea salt

1 tsp baking soda

½ cup & 2 Tbsp raw honey

1 cup coconut milk

6 eggs

¼ cup + 2 Tbsp

1 cup coconut milk

6 organic eggs

¼ cup organic chia seeds

1 cup fresh organic blueberries

 Preheat oven to 350 degrees. Sift the coconut flour, salt & baking soda in a bowl. In a separate bowl or blender, whisk honey, coconut milk, eggs, coconut oil and vanilla. Gently, stir wet mixture into dry ingredients and mix in chia seeds.

Fold in blueberries and pour batter into greased or lined muffins tins, filling ¾ full.

Bake for 25 minutes until muffins begin to turn golden brown and are cooked through, immediately remove from tin and let cool.

 Serving is 1 muffin
